Pear Upside-Down Cake Sunday

















After a weekend of illness, depression-induced sleep, and further gut-wrenching stress about my job and my life, I'll repeat a sentiment I expressed elsewhere:

Do you think I'll feel better if I eat the whole thing at once?

My guess is that the correct answer is "No," so I'll just work on it one sliver at a time. The cake, that is. (As for the other issues, I have no idea how to work on them...)

My answer depends on whether you mean while you're eating it (yes) or afterwards (no).

Pear-Ginger Upside Down Cake
[Basic "Joy of Cooking" recipe, modified]

350 oven.

In cake pan or cast-iron skillet, melt 3-4 T sweet butter and tilt to coat sides.
Sprinkle 1/2-3/4 c of brown sugar over bottom of pan.
Arrange 4 sliced pears, tossed with lemon juice.

Batter

Whisk together & set aside:
2 eggs
2 T buttermilk
1/2 t vanilla

In large bowl combine:
1 c flour
3/4 c sugar [I use just between 1/2-2/3 c]
3/4 t baking powder
1/4 t baking soda
1/4 t salt
[my additions: 2-3 T chopped crystallized ginger, 1/4-1/2 t ground cardamom, ~1 t lemon zest]

Add:
6 T softened butter
6 T buttermilk

Beat on low speed until moistened, then increase speed to medium-high and beat for exactly 1.5 min.
Add 1/3 of egg mixture at a time, beating for exactly 20 seconds and scraping down bowl after each addition.
Spread batter over fruit evenly and bake 35-40 minutes or until pick comes out clean.
After removing, let cool for 3-5 minutes, make sure sides are loosened, then invert.

God, I'm soo freakin hungry. I'm seriously craving a burger and fries and this after it's all done. God, I sound awful, eating in sin, so much dirty eating.

Yum. OK, now I'll have a salad and some quiche.
