Oh, I definitely didn't invent it. Something I recreated from a few years ago -- I guess bacon & endive have sort of a natural affinity or something, and the balsamic adds a bit of sweetness to the bitter greens. It might be better to halve lengthwide larger endives, I've discovered. It's a great entree, especially if YOU like bacon the way *I* like bacon....
